In this new Dutch book Janny de Moor presents the regional cuisine of Europe which has profited from so many centuries of experience. What was best was established by a majority of local votes and we can be certain that only the most unequivocal successes met general approval from the critical samplers. In this way such dishes became the pride of the region and thus part of a distinctive tradition. In our era it is certainly also important to note that the products used in these recipes generally did not come from far-away countries but were grown directly around the corner.
