2007: Dutch Cooking
Janny de Moor describes in this book the unique and delicious cuisine of her own country in over 80 easy-to-follow recipes. In a multicultural society like the Dutch it is not so easy anymore to say what is typically Dutch cooking. However, as a native speaker and accomplished food historian Janny was the ideal person to put the local traditions on Dutch food on record. She does so with many anecdotes and much instructive background information. Often she provides variations of the recipe as found in various provinces of the country. The book features an introduction to the culture and traditions of the Netherlands, including information on the local geography and produce, the history of the Dutch diet, national and local festivities.
All recipes are given in both metric and imperial measures or standard cups and spoons. American and Australian measures are indicated if different. Temperatures are indicated in both Fahrenheit and Celsius. Every recipe is accompanied by a summary of its nutritional value. A list of addresses where typical Dutch ingredients can be obtained outside the Netherlands has been added. The book includes more than 350 specially commissioned photographs of practical steps and final dishes.
